Trusted.Chef's picture
  Crabs 1 Dozen
  Salt 1 Tablespoon
  Celery 1 Bunch (100 gm)
  Black pepper 1⁄8 Teaspoon
  Mixed spices 1 Tablespoon
  Paprika 1⁄8 Teaspoon
  Finley chopped onion 1 Teaspoon
  Boiling water 3 Quart

To the boiling water add the diced celery stalks, chopped celery leaves, mixed spices, onion, salt, pepper and paprika.
Cook 20 min. or until the water is full of flavor.
Then add the crabs, with boiling water enough to cover them.
Cover and cook 25 min.
Then allow the crabs to stand in the liquor until slightly cool.
Next take the crab in both hands with the thumbs at the tail end and pull the upper and lower shells apart.
Discard the material that sticks to the upper shell and remove all the orange, waxy material and spongy substance between the halves of the body and at each side.
The edible part of the crab lies in the 2 compact masses remaining and in the small flakes that may be removed from the large claws.
