Deviled Crab Meat Imperial
|Crabmeat||1 Pound (Alaskan Or Cristfield)|
|Shallots||1⁄4 Ounce, chopped|
|Coffee cream||2 Cup (32 tbs)|
|Breadcrumbs||2 Cup (32 tbs)|
Into a 10" skillet place butter and melt it to hot.
Add diced pepper, mushroom and onion.
When soft, add shallots and pimiento.
Then add flour to make a Roux; add cream and boil, stirring, for 5 minutes.
Add crab meat and bread crumbs, making a thick mixture.
Blend in seasonings.
Divide mixture into five balls; roll in white bread crumbs; place in a baking dish (6" x 6" x 1").
Bake at 350 degrees ten to fifteen minutes.
Remove from oven, cover balls with Hollandaise sauce and glaze under broiler for 15 seconds.
Serve on toast points with a tossed salad and dry white wine.
