Smelts With Lobster Or Crabmeat Stuffing
|Canned crabmeat/Canned lobster||6 1⁄2 Ounce (1 Can)|
|Green onion||1 , minced|
|Minced parsley||1 Tablespoon|
|Worcestershire mayonnaise||1 Teaspoon|
|Eggs||2 , slightly beaten|
|Fine cracker crumbs||2 Ounce|
|Melted butter||1 Tablespoon|
|Dry white wine||4 Fluid Ounce|
Mix together lobster, onion, parsley, and seasonings; add enough mayonnaise to make a paste.
Stuff smelts; sew the openings.
Brush with slightly beaten egg and roll in cracker crumbs.
Place side by side in well-buttered baking dish.
Bake in preheated moderate oven (350°F.) for 20 to 25 minutes, basting every 5 minutes with equal parts of melted butter and wine.
