Smelts With Lobster Or Crabmeat Stuffing

Ingredients
  Canned crabmeat/Canned lobster 6 1⁄2 Ounce (1 Can)
  Green onion 1 , minced
  Minced parsley 1 Tablespoon
  Worcestershire mayonnaise 1 Teaspoon
  Smelts 24
  Eggs 2 , slightly beaten
  Fine cracker crumbs 2 Ounce
  Melted butter 1 Tablespoon
  Dry white wine 4 Fluid Ounce
  Salt To Taste
  Pepper To Taste
Directions

Mix together lobster, onion, parsley, and seasonings; add enough mayonnaise to make a paste.
Stuff smelts; sew the openings.
Brush with slightly beaten egg and roll in cracker crumbs.
Place side by side in well-buttered baking dish.
Bake in preheated moderate oven (350°F.) for 20 to 25 minutes, basting every 5 minutes with equal parts of melted butter and wine.
