Crabmeat Lafitte

Ingredients
  White onion 1⁄4 , chopped
  Green onions 2 , chopped
  Oleo 1⁄4 Pound
  Lump crabmeat 1 Pound
  Table salt 1⁄2 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Sherry wine 2 Ounce
  Toast halves 4 , sliced
  Hollandaise sauce 1⁄4 Cup (4 tbs) (Adjust Quantity As Needed)
  Paprika 1 Dash
Directions

Saute white and green onions in butter until limp.
Add crabmeat and salt and pepper.
Blend together until warm.
Add sherry wine and simmer.
Spoon onto toast and overlay with Hollandaise Sauce.
Sprinkle with paprika on center of sauce.
Serves 4.
