Crab Meat Salad
|Chopped cooked crab meat||2 Cup (32 tbs) (fresh, quick-frozen or canned)|
|Lemon juice||2 Tablespoon|
|Minced celery||1 Cup (16 tbs)|
|Mayonnaise||2⁄3 Cup (10.67 tbs)|
1. Pick over the crab meat to remove any bits of shell. Leave the meat in chunks.
2. Blend the lemon juice with it; then add the celery and mayonnaise. Toss lightly to mix but do not crush the crab meat.
3. Arrange on a lettuce-covered salad platter.
