Broiled Soft Shell Crabs
|Soft shell crabs||4 Large|
|Butter/Margarine||4 Tablespoon, melted|
|Lemon juice||2 Tablespoon|
|Flour||1 Cup (16 tbs)|
1. Clean the soft-shell crabs (unless fish dealer has done this). Rinse and dry them. Dip in butter or margarine mixed with the lemon juice. Roll in a mixture of the salt, pepper, cayenne and flour.
2. Lay crabs in a shallow pan and broil 8 to 10 minutes 3 inches from the source of heat. Turn the crabs and broil 5 minutes.
