Butter Basted Crab
|Grated lemon peel||1⁄4 Teaspoon|
|Lemon juice||3 Tablespoon|
|Thinly sliced green onion with tops||1 Tablespoon|
|Finely chopped parsley||1 Teaspoon|
|Soy sauce||1 Teaspoon|
|Liquid hot pepper||1 Teaspoon|
|Cooked whole crab in shell||2 Pound, cleaned and cracked (1 Large One)|
In a small pan over medium heat, melt butter; add lemon peel, lemon juice, onion, parsley, and soy.
Season to taste with hot pepper seasoning.
Simmer, uncovered, for 3 to 5 minutes.
Arrange crab pieces in an even layer in a 7 by 11-inch baking dish.
Brush butter mixture over crab and bake, covered, in a 300° oven for about 20 minutes (basting often with pan juices) or until heated through.
Garnish with lemon wedges; provide nutcrackers and small forks for removing meat from shells.
