Crab Chantilly With Papaya

Ingredients
  Mayonnaise 1⁄4 Cup (4 tbs)
  Minced pimiento 1 Tablespoon
  Minced fresh parsley 1 Tablespoon
  Fresh lemon juice 1 Teaspoon
  Salt To Taste
  Freshly ground pepper To Taste
  Whipping cream 1⁄2 Cup (8 tbs), whipped
  Cooked crabmeat 2 Cup (32 tbs)
  Lettuce leaves 4
  Papaya/4 fresh pineapple spears 1 , peeled, quartered, seeded and thinly sliced
  Mint sprigs 4 (For Garnish)
Directions

Combine mayonnaise, pimientos, parsley, lemon juice, salt and pepper in small bowl.
Fold in whipped cream.
Add crabmeat.
Arrange lettuce leaves on plate.
Mound crabmeat mixture in center.
Surround with papaya slices.
Garnish with mint.
Serve immediately.
