Cucumber Bellevue With Crab Meat Or Shrimp

  Crab meat/1 1/2 cups cooked whole shrimp 1 Cup (16 tbs)
  Plain gelatin 2 Tablespoon
  Cucumbers 2 Medium
  Onion slice/1 teaspoon onion juice 2
  Hot water 1 1⁄4 Cup (20 tbs)
  Green coloring 1 Drop
  Tarragon vinegar/A sprig of tarragon from bottle if possible 2 Tablespoon
  Lemon juice 1 Teaspoon
  Salt 1 Teaspoon
  Sugar 1 Teaspoon
  Cayenne pepper 1⁄8 Teaspoon
  Finely chopped celery 1 Cup (16 tbs)

Flake the crab meat, or prepare shrimp; mix with the cayenne pepper and chopped celery.
Peel cucumbers and dice, fine.
Add cucumbers to crab-celery mixture; let drain in refrigerator.
Heat the 1 1/4 cup of water along with the onion and other seasonings, allowing to simmer for 5 minutes, but not reduce in quantity.
Soak gelatin in cold water.
Strain water and seasonings, add gelatin and thoroughly dissolve.
Tint with coloring, if desired, or leave it clear, giving it a "bellevue" (clear view).
Grease a mold (a fish or lobster mold is pretty for this); add 1/4 inch of gelatin mixture and allow to congeal; pour in crab meat mixed with 3 tablespoons of gelatin and allow to set; then add another layer of gelatin, etc., until mold is filled, ending with gelatin on top.
If desired, mix crab mixture with gelatin and pour all in together, instead.
