Cracked Crab With Onion

Ingredients
  Dry sherry 80 Milliliter (1/3 Cup)
  Water 80 Milliliter (1/3 Cup)
  Oyster sauce 60 Milliliter (1/4 Cup)
  Cornstarch 2 Teaspoon
  Green onions 14
  Vegetable oil 15 Milliliter (1 Tablespoon)
  Minced fresh ginger 3 Tablespoon
  Cooked crabs 6 Pound, cleaned and cracked (Dungeness Crab, 2.7 Kilogram, 3 In Number)
Directions

1. In a small bowl, stir together sherry, 1/3 cup water, oyster sauce, and cornstarch until blended; set aside. Cut onions into 2-inch (5-cm) lengths, keeping white and green parts separate.
2. Heat oil in a wide nonstick frying pan or wok over medium-high heat. Add ginger and white parts of onions; stir-fry until onions just begin to brown (about 2 minutes). Stir sherry mixture and pour into pan; stir until sauce boils and thickens slightly (about 1 minute). Add crab and green parts of onions; stir to coat with sauce. Reduce heat to low, cover, and cook, stirring occasionally, until crab is heated through (5 to 8 minutes)
