Classic Crab Stuffed Snow Peas
|Cream cheese||8 Ounce, softened (1 Package)|
|Lemon juice||1 Tablespoon|
|Snow crab||6 Ounce, drained|
|Snow peas||60 , ends trimmed|
|Red pepper||1 , cut into matchstick slivers|
|Kosher salt||To Taste|
In a small bowl, mix softened cream cheese and lemon juice until smooth.
Stir in crab; season with Kosher salt and pepper.
Cook snow peas in boiling water for about 1 minute until wilted, but still crisp.
Drain snow peas and drop into a bowl of cold water.
With a sharp paring knife, split open the curved seam of each snow pea (this may be done ahead of time).
With a small spoon, fill each snow pea with crab mixture.
Garnish with the sliver of red pepper.
