Classic Crab Louis
|Mayonnaise||1 Cup (16 tbs)|
|Tomato based chili sauce||1⁄4 Cup (4 tbs)|
|Finely chopped green pepper||1⁄4 Cup (4 tbs)|
|Finely chopped green onion||1⁄4 Cup (4 tbs)|
|Whipping cream||1⁄4 Cup (4 tbs), whipped|
|Lemon juice||1 1⁄2 Tablespoon|
|Iceberg lettuce head||2 Small|
|Dungeness crabs/3/4 to 1 pound cooked / canned crab||2 Large, cooked, cracked, and shelled|
|Tomatoes||4 Large, cut into wedges|
|Hard-cooked eggs||4 , cut into wedges|
Mix together mayonnaise, chili sauce, pepper, and onion; fold into whipped cream.
Season with salt and lemon juice to taste.
Arrange outer leaves of lettuce on 4 large plates; shred remaining lettuce and divide evenly among 4 plates.
Place crab (reserve legs) on shredded lettuce.
Arrange tomatoes and eggs around crab.
Pour over dressing and garnish with crab legs, parsley, and lemon wedges.
