Classic Crab Louis
|Mayonnaise||1 Cup (16 tbs) (Purchased Or Homemade)|
|Tomato based chili sauce||1⁄4 Cup (4 tbs)|
|Finely chopped green pepper||1⁄4 Cup (4 tbs)|
|Sliced green onion with tops||1⁄4 Cup (4 tbs)|
|Whipping cream||1⁄4 Cup (4 tbs), whipped|
|Lemon juice||2 Tablespoon|
|Iceberg lettuce head||2 Small|
|Tomatoes||4 Large, cut into wedges|
|Hard-cooked eggs||4 , cut into wedges|
In a small bowl, thoroughly combine mayonnaise, chili sauce, green pepper, and onions; fold into whipped cream.
Season with salt and lemon juice to taste.
Arrange outer leaves of lettuce on 4 large plates; shred remaining lettuce and divide evenly among the plates.
Place crabmeat on top of shredded lettuce, and arrange tomatoes and eggs around crab.
Spoon dressing over crab; garnish with parsley and lemon wedges.
