Classic Fillet Of Flounder Stuffed With Crab
|Flounder fillets||8 (Sole)|
|Crabmeat||1 Pound (You May Use Imitation)|
|Onion||1 , chopped|
|Celery stalks||1 , chopped|
|Bread||1 1⁄2 Cup (24 tbs), cubed|
|Dry mustard||1 Teaspoon|
|Black pepper||To Taste|
|White sauce||1 Tablespoon|
Grease 9 x13 inch baking dish with butter.
In large saucepan, melt butter.
Add onion and celery, cook till limp but not browned.
Take off heat.
Add crabmeat, toss in bread cubes, juice from 1 lemon, dry mustard, 2 eggs, and pepper to taste.
Spoon stuffing into each filet and fold over.
Place in baking dish and place a pat of butter on top of each.
Bake 375° oven for 20-25 minutes.
On the side, serve with White Sauce.
