Crab In Black Bean Sauce
|Fermented black beans||1 1⁄2 Tablespoon, rinsed, drained and finely chopped|
|Garlic clove||1 Large, minced|
|Cooked crab||1 Large, cleaned and cracked|
|Green pepper||1 Small, seeded and cut into 1 inch squares|
|Soy sauce||1 Tablespoon|
|Dry sherry||1 Tablespoon|
|Chicken broth||1⁄3 Cup (5.33 tbs)|
|Whole green onions||2 , cut into 1 inch lengths|
|Salad oil||3 Tablespoon|
|Minced fresh ginger||3⁄4 Teaspoon|
Cut crab body in quarters; leave legs and claws whole.
Heat a wok or wide frying pan over high heat.
When pan is hot,add oil.
When oil begins to heat, add black beans, garlic, and ginger.
Stir-fry for 5 seconds.
Add green pepper and stir-fry for 1 minute.
Add crab, soy, sherry, onion, and chicken broth.
Cook, stirring, until crab is hot
