Cheesed Crabflakes En Coquilles
|Tabasco sauce||1 Dash|
|Crabmeat||1 Dozen, boiled|
|Grated sharp cheese||1⁄2 Cup (8 tbs), grated|
|Breadcrumbs||1⁄2 Cup (8 tbs), grated|
|Fat||1 Cup (16 tbs) (For Frying)|
Beat the 2 eggs separately and mix one with the meat from the boiled crabs.
Season with salt, pepper, and Tabasco, and stir the grated cheese in well.
Sift into this mixture enough breadcrumbs to make the mixture hold together.
Form into balls, dip in beaten egg, then in breadcrumbs, and fry in boiling fat to golden brown crispness.
