Broiled Soft Shelled Crabs
|Shelled crabs||12 (Dressed For Cooking)|
|Flour||1 Cup (16 tbs) (For Dredging)|
|Butter||1⁄2 Cup (8 tbs) (At Room Temperature)|
|Chopped parsley||1⁄2 Cup (8 tbs)|
|Chopped chives||1 Tablespoon|
|Melted butter||1 Tablespoon|
|Lemon juice||1 Tablespoon|
1. Dredge the crabs lightly with flour. Arrange them in a flat broiling dish or on a broiling rack.
2. Cream the butter with the parsley, chives, paprika and salt and dot the crabs with the mixture.
3. Broil the crabs about three inches from the source of heat in a preheated broiler five to eight minutes. Baste often and turn once during cooking.
