Crabmeat Sauce Over Broccoli

Ingredients
  Vegetable oil 15 Milliliter (1 Tablespoon)
  Fresh ginger slices 1
  Garlic 1 Clove (5 gm), crushed
  Broccoli florets 1 2⁄3 Pound (750 Gram)
  Salt 1⁄4 Teaspoon (1 Milliliter)
  Light soy sauce 1 Teaspoon (5 Milliliter)
  Sugar 1⁄2 Teaspoon (2.5 Milliliter)
  Dry sherry 45 Milliliter (3 Tablespoon)
  Fish stock/Water 60 Milliliter (0.25 Cup)
  Dry sherry/White wine 15 Milliliter (1 Tablespoon)
  Pepper 1 Pinch
  Fish stock 250 Milliliter (1 Cup)
  Cornstarch 20 Milliliter, blended with 3 tablespoon /45 milliliter stock or water (1 1/2 Tablespoon)
  Crabmeat 1⁄2 Pound (Fresh, Frozen Or Canned, 225 Gram)
  Shredded red pepper 15 Milliliter, blanched (1 Tablespoon)
Directions

1 Heat oil in a wok. Add ginger and garlic and cook until golden; remove. Add broccoli, stirring to coat with oil. Stir in salt, soy sauce, sugar, sherry and stock. Cook covered for 3 - 4 minutes until broccoli is bright green. Avoid overcooking.
2 Remove to serving platter and keep warm.
3 To Make Sauce: Heat sherry, salt, pepper and stock. Stir in blended cornstarch and stock to thicken. When boiling, stir in crabmeat. Simmer 2 - 3 minutes. Pour sauce over broccoli, garnish with red pepper
