Watermelon Spice Pie
|Watermelon rind||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|Vinegar||1⁄4 Cup (4 tbs)|
|Raisins||1⁄2 Cup (8 tbs)|
|Pastry||1 (For 2 Crust Pie)|
Cut green outer rind and most of pulp from water- melon rind; cut into 1/4-inch cubes.
Combine 1 1/2 cups cubes with water to cover in saucepan; simmer until tender.
Drain; add sugar, cinnamon, nutmeg, cloves, salt, flour, vinegar and raisins to watermelon cubes; blend well.
Pour into pastry shell; cover with pastry.
Cut steam vents.
Bake at 450 degrees until crust is browned.
Reduce temperature to 350 degrees; bake until filling is set.
