Savory Upside Down Pie

Ingredients
  Frozen puff pastry 7 1⁄2 Ounce
  Ground beef 1 1⁄2 Pound
  Salt 1 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Onion 1 Large, chopped
  Egg yolks 3
  Mushrooms 1 Cup (16 tbs)
  Bacon slices 4 Ounce
  Crumbled blue cheese 1⁄2 Cup (8 tbs)
  Chopped sorrel 2 Tablespoon
  Chopped chervil 2 Tablespoon
Directions

GETTING READY
1. Thaw the pastry

MAKING
2. In a bowl, mix the ground beef with onion, salt and pepper and use egg yolk to bind
3. Use the bacon to cover an 8" loose-bottomed cake pan; arrange the cheese, herbs and mushroom quarters on top
4. Add the meat mixture on top, press it down and smooth the top
5. Roll the thawed pastry on a surface dusted with flour, into a circle large neough to accomodate the filling
6. Add the filling on top, prick with a fork and bake for an hour or less at 400° F
7. Remove from the oven, invert pan over a warm serving dish adn turn the pie out

SERVING
8. Serve as appropriate
