Blueberry Peach Pie Supreme

Ingredients
  Blueberries 7 Pint
  Peaches 4 Medium, sliced
  Tapioca 2 1⁄2 Tablespoon
  Almond 1⁄2 Teaspoon
  Cinnamon To Taste
  Flour 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Baking powder 1⁄2 Teaspoon
  Shortening 1⁄3 Cup (5.33 tbs)
Directions

MAKING
1) In a bowl, mix together the blueberries, tapioca and then add in the sugar
2) Add in the almond extract and cinnamon and stir to mix well
3) Keep the mixture to rest for about 5 minutes
4) Mix the flour, salt, baking powder and then add 2 tablespoons of water to make a paste like consistency
5) Add in the shortening and mix thoroughly
6) Reserve 1 inch ball of dough
7) Roll out the reserved dough into a 9 inch circle to cover the base of a pie dish
8) Spoon in the fruits and then roll out the remaining dough into 6 inch circle to cover the fruits
9) Cut into 6 pie shaped wedges and sprinkle in the sugar and cinnamon over the wedges
10) Bake for 425F for 15 minutes
11) Reduce the temperature to 375F for about 20 minutes

SERVING
12) Serve warm
