Savory Upside Down Pie

Ingredients
  Ground beef 1 1⁄2 Pound (675 Gram)
  Salt 1 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Onion 1 Large, chopped
  Egg yolks 3
  Sliced bacon 4 Ounce (100 Gram)
  Blue cheese 50 Gram, crumbled (1/2 Cup)
  Chopped mushrooms 100 Gram (1 1/2 Cups)
Directions

Mix ground beef, salt, pepper and onion in a large bowl.
Stir in egg yolks.
Preheat oven to 400°F (205CC).
Cover bottom of an 8-inch (20-cm) removable-bottomed cake pan with bacon slices.
Arrange blue cheese, sorrel, chervil and mushrooms on top.
Cover with ground meat mixture, pressing it down firmly.
Smooth the surface.
On a floured surface, roll out puff pastry dough to a circle large enough to cover filling.
Place over filling; pierce dough all over with a fork.
Bake 40 to 50 minutes.
Invert pan over a warm plate or a rack and turn out pie.
