Haddock On Cornbread
Combine 1 1/2 pounds haddock fillets or other fish fillets, cooked and flaked (3 cups); % cup mayonnaise or salad dressing; 3 tablespoons chopped canned pimiento; 1/4 cup finely chopped green pepper; and 1/2 teaspoon salt.
Split 4 toaster-style corn muffins in half; butter halves.
Spread fish mixture over muffins; top each with a slice of process American cheese.
Bake at 350Â° for 20 minutes.
