Corn Bread Ring
|All purpose flour||250 Milliliter, 1 cup|
|Cornmeal||250 Milliliter, 1 cup|
|Shredded cheddar cheese||175 Milliliter, 3/4 cup, old|
|Baking powder||15 Milliliter, 1 tablespoon|
|Salt||1 Milliliter, 1/4 teaspoon|
|Milk||175 Milliliter, 3/4 cup|
|Vegetable oil||75 Milliliter, 1/3 cup|
|Corn||175 Milliliter, 3/4 cup|
|Chopped pickled jalapeno pepper||15 Milliliter, 1 tablespoon|
Grease 8-inch (1.5 L) ring mould.
Line bottom with waxed paper; grease.
In large bowl, stir together flour, cornmeal, cheese, baking powder and salt.
In separate bowl, beat together eggs, milk and oil; stir into dry ingredients just until blended.
Stir in corn, and jalapeno pepper (if using); spoon into prepared pan.
Bake in 375°F (190°C) oven for 35 minutes or until tester inserted in center comes out clean.
Let cool in pan for 5 minutes.
Loosen edges and unmould onto serving plate.
Makes 1 ring.
