Corn Bread (Johnny cake)
|Unsifted all purpose flour||3⁄4 Cup (12 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||4 Teaspoon|
|Yellow cornmeal||1 Cup (16 tbs)|
|Egg||1 , beaten|
|Milk||1 Cup (16 tbs)|
|Vegetable oil/Melted shortening||1⁄4 Cup (4 tbs)|
Preheat oven to 375°F.
Combine flour, sugar, baking powder and salt.
Mix in cornmeal, and make well in center.
Combine egg, milk and vegetable oil; then stir quickly into dry ingredients until combined.
Pour into greased 8-inch square cake pan.
Bake 25-30 minutes at 375°F.
Cut into squares.
Or bake in corn-stick pans 15 minutes.
Makes 16 squares.
