Skillet Fried Corn Bread with Spicy Shrimp and Crab Meat

|Bacon fat/Oil||1 Tablespoon|
|Buttermilk||1⁄4 Cup (4 tbs)|
|Boiling water||2 Cup (32 tbs)|
|Corn oil||2 Cup (32 tbs) (For Deep Frying)|
|For spicy shrimp & crab meat|
|Heavy cream||1 1⁄2 Cup (24 tbs)|
|Chicken stock||1 1⁄2 Cup (24 tbs)|
|Olive oil||1 Tablespoon|
|Shrimp||16 Large, peeled and deveined|
|Red bell peppers||1⁄2 , cut into 1/2-inch squares|
|Green bell peppers||1⁄2 , cut into 1/2-inch squares|
|Yellow bell peppers||1⁄2 , cut into 1/2-inch squares|
|Serrano chilies||2 , chopped|
|Garlic||2 Clove (10 gm), minced|
|Shallots||2 , finely chopped|
|Sherry||1⁄4 Cup (4 tbs)|
|Crab meat||6 Ounce|
|Lemon juice||1 Tablespoon (Or As Required)|
|Cilantro sprigs||3 (For Garnish)|
1) Corn bread: In a mixing bowl, combine the cornmeal, sugar and salt together.
2) Stir in the bacon fat, buttermilk and boiling water; blend thoroughly.
3) In a cast-iron skillet, pour 1/2 inch oil and heat over a medium-high heat to 325°F.
4) Drop large spoonfuls of cornmeal batter into the hot oil.
5) Fry the corn bread for 5 to 7 minutes, until evenly browned.
6) Remove with a slotted spoon and drain on paper towels.
7) Spicy shrimp and crab meat: In a medium saucepan, bring the cream and chicken stock to a boil over high heat, boil for 5 to 7 minutes until reduced to about 1 1/2 cups. Set aside.
8) In a large skillet, heat oil over a medium-high heat.
9) Season the shrimp with salt, add into the skillet and saute for 2 minutes.
10) Stir in the peppers and saute for another 2 minutes.
11) Stir in the chiles, garlic, shallots and paprika, saute for 1 minute.
12) Stir in thesherry and cook for 1 to 2 minutes until almost evaporated.
13) Stir in the cream mixture and cook until thoroughly heated.
14) Stir in the crab meat, then season to taste with lemon juice and salt.
15) Arrange 3 corn breads on each of the 4 serving plates, spoon the seafood mixture in the center of each plate.
16) Garnish with cilantro sprigs and serve the Skillet Fried Corn Bread with Spicy Shrimp and Crab Meat immediately.
