Chili Corn Bread
|All purpose flour||1 Cup (16 tbs)|
|Yellow cornmeal||1 Cup (16 tbs)|
|Baking powder||4 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Soft shortening||1⁄4 Cup (4 tbs)|
|Canned chili||15 1⁄2 Ounce|
|Cheddar cheese||1 Cup (16 tbs)|
1)In a pan, fry bacon until crisp and then crumble it.
2)In a bowl, sift together flour with cornmeal, sugar, baking powder and salt.
3)Make a depression in center and add egg, milk and shortening.
4)Mix until just blended and add bacon.
5)Take a hot well-greased round baking dish and pour 2/3 batter and spread evenly.
6)Spread chili in the center and then pour remaining batter around edge.
7)Bake at 400 degrees for 20 to 25 minutes.
8)Top the bread with cheese and bake for 1 minute or until cheese melts.
9)Serve the chili corn bread sliced.
