Going Bananas With Cornbread

Ingredients
  Bananas 1 Large, sliced (Or 2 Small Sized)
  Raisins 1⁄2 Cup (8 tbs)
  Apple 1 , diced
  Almonds 1⁄2 Cup (8 tbs), chopped
  Cinnamon 1 Tablespoon
  Baking powder 2 Tablespoon
  Corn meal 1 Cup (16 tbs)
  Soy flour 1 Cup (16 tbs)
  Honey 3 Tablespoon
  Water 1 1⁄2 Cup (24 tbs)
Directions

GETTING READY
1) Preheat oven to 400° F.
2) In a bowl, add first 5 ingredients to toss. Set it aside.
3) In another bowl, add corn meal, soy flour and baking powder.
4) Stir in honey and water to the mixture and blend thoroughly.

MAKING
5) Use a 10" cast-iron skillet to pour 2 T oil.
6) Heat this inside oven for 5 minutes.
7) Use the fruit mixture to spread at the bottom of skillet.
8) Top with the batter.
9) Place the skillet inside oven to bake for 20 minutes until brown on edge.

SERVING
10) Drizzle honey on top before serving.
