Catfish with Corn Bread Stuffing
|Catfish||1 Large, remove the eyes|
|Toast slices||6 , crumbled|
|Onions||3 Cup (48 tbs), chopped|
|Celery||1 Cup (16 tbs), chopped|
|Parsley||1 Cup (16 tbs), chopped|
|Corn bread||1 Small, crumbled|
|Fish stock||5 Cup (80 tbs) (I Usually Cut Off The Head And Boil It To Make My Stock)|
Mix all of the above stuffing ingredients.
Grease catfish with olive oil inside and outside.
Pat on red cayenne pepper and salt.
Stuff cavity with dressing.
Baking time depends on the size of fish.
Flesh should flake off bones when done.
You can cook any stuffing that you can't get into the cavity in a deep baking pan or roaster.
