|Cornmeal||1 Cup (16 tbs)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Baking powder||4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)|
|Fresh corn cut from cob||1 Cup (16 tbs) (2 Ears)|
|Egg||1 , slightly beaten|
|Bacon drippings/Vegetable oil||1⁄4 Cup (4 tbs)|
|Buttermilk||1 Cup (16 tbs)|
1) Preheat oven to temperature of 475 degrees.
2) Combine cornmeal, flour, baking powder, sugar and salt together and add the corn, egg, bacon, buttermilk and crippings. Stir the mixture properly.
3) Pour the mixture into a geased cast-iron skillet of 9 inches or a 9-inch square baking pan.
4) Bake in preheated oven for 20 to 25 minutes or till the mixture browned.
5) Serve hot.
