|Yellow cornmeal||1⁄4 Cup (4 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Baking powder||1 Teaspoon|
|Skim milk||1⁄4 Cup (4 tbs)|
|Frozen egg substitute||1 Tablespoon, thawed|
|Vegetable oil||1 1⁄2 Teaspoon|
|Vegetable cooking spray||1|
Combine first 4 ingredients in a medium bowl; make a well in center of mixture.
Combine milk, egg substitute, and oil; add to cornmeal mixture, stirring just until dry ingredients are moistened.
Pour batter into a 7 1/2- x 3- x 2-inch loafpan coated with cooking spray.
Bake at 400° for 10 to 12 minutes or until lightly browned.
Let cool in pan on a wire rack.
