Country Corn Bread
|Yellow cornmeal||1 1⁄2 Cup (24 tbs)|
|Sifted all purpose flour||2 Cup (32 tbs)|
|Baking powder||4 Teaspoon|
|Milk||2 Cup (32 tbs)|
|Bacon drippings/Shortening||4 Tablespoon|
1. Combine cornmeal, flour, sugar, baking powder and salt in a large bowl. Add eggs and milk. Stir to make a smooth batter; stir in bacon drippings.
2. Pour into two greased 8x8x2-inch baking pans.
3. Bake in hot oven (450°) 25 minutes, or until crusty and golden brown. Cool slightly in pans on wire racks; serve warm.
