Corn Bread Griddle Cakes
|Corn bread mix||8 1⁄2 Ounce (1 Package)|
|Cooking oil||2 Tablespoon|
|Berry jam||1 Cup (16 tbs)|
|Confectioners sugar||3⁄4 Cup (12 tbs)|
Prepare corn bread mix according to package directions; add 1/4 cup additional liquid and 2 tablespoons oil.
Mix only until moistened.
Pour small amount batter onto hot greased griddle.
Bake on both sides until lightly browned.
Place about 1 tablespoon jam in center of each griddle cake; roll.
Sprinkle with confectioners' sugar; serve hot.
