|Yellow cornmeal||1 Cup (16 tbs)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Salt||1 1⁄4 Teaspoon|
|Buttermilk||1 Cup (16 tbs)|
|Cracklings||1⁄2 Cup (8 tbs), broken to size of small peas|
Heat a 10-inch skillet in the oven for 5 to 10 minutes.
Remove from oven, add bacon fat, and tilt skillet back.and forth to coat the entire surface with fat.
While skillet is heating, lift the cornmeal lightly into measuring cup.
Sift flour, measure and put into sifter with cornmeal, baking powder, soda, salt, and sugar.
Sift directly into mixing bowl.
Add buttermilk, egg, and cracklings, beat hard until well mixed.
Pour batter into piping hot greased skillet, bake in hot oven (450° F.) 25 to 30 minutes.
Serve at once.
