Wild Apple Cornbread
|Yellow cornmeal||2 Cup (32 tbs)|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|Buttermilk||2 Cup (32 tbs)|
|Margarine||2 Tablespoon, melted|
|Eggs||2 , beaten|
|Baking soda||1 Teaspoon|
|Cold water||1 Tablespoon|
|Wild apples||1 Cup (16 tbs), peeled and grated|
|Honey||2 Tablespoon (Adjust Quantity As Needed)|
Mix together in top of double boiler cornmeal, sugar, salt, milk and margarine.
Set over hot water and cook 10 minutes.
Add eggs, soda (dissolved in water), and apples.
Pour into greased baking dish and bake in preheated oven at 400°F for 30 minutes.
