Apple Corn Bread
|Corn meal||2 Cup (32 tbs)|
|Butter||1 Tablespoon (for greasing)|
|Apples||1 1⁄2 Cup (24 tbs), chopped|
|Sugar||1⁄4 Cup (4 tbs)|
|Buttermilk||2 Cup (32 tbs)|
|Cold water||1 Tablespoon|
Preheat oven to 400°.
Mix corn meal, sugar, salt, buttermilk and shortening in top of a double boiler.
Cook over boiling water 10 minutes, stirring occasionally.
Cool to lukewarm; stir in eggs.
Add soda and water; stir briskly (will foam up).
Stir in apples.
Bake in greased hot iron skillet.
Bake 20 to 25 minutes.
