|All purpose flour||1 Cup (16 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||4 Teaspoon|
|Cornmeal||1 Cup (16 tbs)|
|Milk||1 Cup (16 tbs)|
|Butter||1⁄4 Cup (4 tbs), melted|
Preheat oven to 375 °F (190 °C).
Butter a 9 x 5 inch (23 x 13 cm) loaf pan.
In a bowl, sift first 4 ingredients.
Mix in cornmeal.
Make a well in the center.
In a second bowl, beat egg.
Fold in milk and butter.
Pour liquid into the center of well.
With a spatula, glide flour towards center of bowl.
Mix to a smooth dough.
Pour dough into pan.
Cover with wax paper.
Let stand 20 minutes.
Bake in oven 25-30 minutes.
Serve hot or cold.
APPLE CORN BREAD Proceed following corn bread recipe.
Cover dough with 2 apples, peeled and sliced.
Sprinkle with 2 tbsp (30 ml) brown sugar and 1 tsp (5 ml) cinnamon.
Bake as instructed.
