Blue Corn Bread
|Blue cornmeal||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Tablespoon|
|Onion||1 Medium, chopped|
|Eggs||2 , beaten|
|Dairy sour cream||1 Cup (16 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs), melted|
|Cheddar cheese||2 Cup (32 tbs), grated|
|Canned green chilies||1⁄4 Cup (4 tbs), chopped|
Combine commeal, salt, baking powder and onion in a medium mixing bowl.
Make a well in center of cornmeal mixture.
Add eggs, sour cream, butter, cheese and chilies; mix well.
Pour into a greased 9 inch square pan.
Bake in a preheated 350°F oven 40 minutes, or until knife inserted in center comes out clean.
