Cornbread

In this video I show you a kicked up cornbread recipe, that you will not soon forget! I combine a homemade buttermilk cornbread batter with smoked pull pork, jalapeños, and pepper jack cheese that is simply in a league of it's own. Easy to prepare and a great way to use pulled pork left overs.

Ingredients

Corn meal 1 Cup (16 tbs)
Sugar 1 Tablespoon
All purpoase flour 3/4 Cup (12 tbs)
Baking powder 1 1/2 Teaspoon
Baking soda 1 Teaspoon
Salt 1/4 Teaspoon
Eggs 2
Melted butter 6 Tablespoon
Butter milk 1 1/2 Cup (24 tbs)
Jalapeno 1 Large , chopped finely

Directions

GETTING READY

1.  Prehaet the oven to 425 degrees F.

2.  Grease a skillet with non stick spray.

 

MAKING

3.  In a large bowl, combine corn meal, sugar, baking powder, baking soda, salt and all purpose flour. Mix well and set aside.

4.  In another bowl, mix eggs, melted butter and buttermilk, Stir lightly to mix.

5.  Create a well in the center of dry ingredients and pour in the egg mixture a little at a time. Fold gently to combine the ingredients well. 

6.  Add in the jalapeno, pulled pork and pepperjack cheese. Mix well to combine all the ingredients.

7.  Pour the prepared batter in to the greased skillet/pan and place in the oven until done.

 

SERVING

8.  Slice and serve.
