Fresh Corn Relish

Ingredients
  Fresh cut corn 9 Cup (144 tbs)
  Cabbage 2 Cup (32 tbs), ground
  Ground onion 1 1⁄2 Cup (24 tbs)
  Green pepper 2 Cup (32 tbs), seeded, ground
  Crushed red pepper 2 Teaspoon
  Celery seed 2 Teaspoon
  Mustard seed 1 Teaspoon
  Turmeric 2 Teaspoon
  Salt 2 1⁄2 Tablespoon
  Sugar 1 Cup (16 tbs)
  Cider vinegar 2 Cup (32 tbs)
  Chopped pimento 1⁄2 Cup (8 tbs)
Directions

Bring to a boil the vegetables, spices, salt, sugar and vinegar.
Cook uncovered twenty minutes, or until relish has thickened.
Stir in pimento.
Ladle into hot sterilized jars at once.
Seal immediately.
Let stand six weeks before using.
