Fresh Corn Relish

|Fresh cut corn||9 Cup (144 tbs)|
|Cabbage||2 Cup (32 tbs), ground|
|Ground onion||1 1⁄2 Cup (24 tbs)|
|Green pepper||2 Cup (32 tbs), seeded, ground|
|Crushed red pepper||2 Teaspoon|
|Celery seed||2 Teaspoon|
|Mustard seed||1 Teaspoon|
|Salt||2 1⁄2 Tablespoon|
|Sugar||1 Cup (16 tbs)|
|Cider vinegar||2 Cup (32 tbs)|
|Chopped pimento||1⁄2 Cup (8 tbs)|
Bring to a boil the vegetables, spices, salt, sugar and vinegar.
Cook uncovered twenty minutes, or until relish has thickened.
Stir in pimento.
Ladle into hot sterilized jars at once.
Let stand six weeks before using.
