Corn Starch Blancmange
|Sugar||1⁄3 Cup (5.33 tbs)|
|Cold milk||1⁄2 Cup (8 tbs)|
|Milk||1 1⁄2 Cup (24 tbs), heated|
|Vanilla extract||1 Teaspoon|
Mix sugar, cornstarch, and salt in a saucepan.
Stir in cold milk.
Add hot milk gradually, stirring constantly.
Bring to boiling, stirring constantly; cook 1 minute.
Remove from heat.
Blend in vanilla extract.
Beat egg whites until rounded peaks are formed.
Spread over cornstarch mixture and fold together.
Turn into a 1 quart mold and chill until firm.
Unmold onto a chilled serving plate and serve with desired fruit sauce.
