Corn Meal Cookies
|Shortening||1 Cup (16 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Lemon extract||1 Teaspoon|
|Raisins||1⁄2 Cup (8 tbs), chopped|
|Cake flour||3 Cup (48 tbs)|
|Baking powder||1 Teaspoon|
|Yellow corn meal||1 Cup (16 tbs)|
Cream shortening, add sugar, eggs and lemon extract.
Dredge raisins with 1/2 cup of flour and add.
Sift remaining flour with other dry ingredients and add, mixing thoroughly.
Drop by teaspoons onto a greased cookie sheet and flatten out with a fork.
Bake 10 to 12 minutes at 400Â°F.
Makes 60 2 inch cookies.
