Squaw Corn

Ingredients
  Bacon slices 4
  Green pepper 1 Medium, chopped
  Onion 1 Small, chopped
  Cream style corn/Fresh cut corn 2 Cup (32 tbs)
  Eggs 4 , beaten well
  Salt 1 Teaspoon
  Pepper 1 Dash
Directions

Fry bacon until crisp; remove from pan, and drain off all but 2 tablespoons fat. Add green pepper and onion to fat in pan, and cook until soft. Combine corn, salt, pepper, and beaten eggs. Add to pan and cook, stirring constantly, until eggs are set. Crumble in bacon. This makes a good luncheon dish served with a green salad and whole wheat muffins.
