GardenPalooza Corn Salsa

GardenPalooza is being held at Fir Point Farms and the new owners of Fir Point are really bringing something new to the table, and we are talking food! Jessica and Jack Romaine are the owners of Country Grains in Wilsonville and they are known for their great sandwiches and tasty baked goods. Now they are able to carry something new, fresh fruits and vegetables. Owning a farm they now can grow lots of new things and bring in lots of wonderful vegetables from the neighboring farms. That means Jessica has been busy in the kitchen coming up with some new recipes. She shares one of her new recipes with David, a roasted corn salsa. This is a quick and easy recipe that uses the best vegetables of the season.
  Corn cobs 2 Medium, roasted
  Cilantro 1⁄2 Cup (8 tbs)
  Onion 2 Tablespoon, chopped finely
  Green pepper 1 Large, diced
  Yellow pepper 1⁄2 Cup (8 tbs), diced
  Mexican pepper 1⁄2 Cup (8 tbs), chopped

1. Roast corns.

1. Cut roasted corns and put it into a big dish.
2. Chop cilantro and add it to the corns.
3. Add in diced onions and green pepper, yellow peppers and Mexican pepper. Add jalapeno pepper.
4. Add in tomato and squeeze lime. Season with salt and pepper.

5. Serve it with tacos or nachos.
