Cucumber and Corn Saute
|Reduced calorie margarine||2 Tablespoon|
|Sliced green onion||2 Tablespoon|
|Dried basil leaves||1⁄2 Teaspoon|
|Frozen whole kernel corn||1 Cup (16 tbs)|
|Cucumber||1 Medium, peeled, seeded and chopped|
|Chopped pimiento||1 Tablespoon|
|Dry mustard||1⁄4 Teaspoon|
In 1 1/2-quart casserole, combine margarine, onion and basil.
Microwave at High for 1 1/2 to 2 1/2 minutes, or until onion is tender.
Stir in remaining ingredients.
Microwave at High for 4 to 6 minutes longer, or until cucumber is tender, stirring after every 2 minutes.
