Corn With Parmesan Mayonnaise
|For parmesan mayonnaise|
|French mustard||2 Teaspoon|
|Garlic||1 Clove (5 gm), crushed|
|Lemon juice||1 Tablespoon|
|Oil||3⁄4 Cup (12 tbs)|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
|Cream||1⁄2 Cup (8 tbs)|
|Shallots||2 , chopped|
Remove corn husks and silks.
Spread 6 pieces of aluminium foil with butter, wrap a cob of corn in each piece of foil, barbecue until tender, turning every 5 minutes.
Serve topped with Parmesan Mayonnaise.
Parmesan Mayonnaise: Combine egg yolks, mustard, garlic and lemon juice in food processor.
With motor running add oil very slowly through feed tube, add cheese and cream, process until com-ined, stir in shallots.
