Scalloped Corn With Plain Crackers

Ingredients
  Canned whole kernel corn 5 Pound (5 Cans, 1 Pound Each)
  Undiluted evaporated milk 1⁄4 Cup (4 tbs)
  Butter/Margarine 1 1⁄2 Cup (24 tbs)
  Onion 1 , minced
  Finely broken unsalted plain crackers 4 Cup (64 tbs)
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Fine cracker crumbs 1⁄2 Cup (8 tbs)
Directions

Drain corn liquid into saucepan and add enough evaporated milk to make 3 cups.
Heat liquid with 1 1/4 cups butter and onion.
Pour over broken crackers.
Add corn and seasonings and pour into greased shallow baking dishes.
Melt remaining 1/4 cup butter and mix with fine crumbs.
Sprinkle on mixture.
Bake in preheated moderate oven (375°F.) about 30 minutes.
