Scalloped Corn With Plain Crackers
|Canned whole kernel corn||5 Pound (5 Cans, 1 Pound Each)|
|Undiluted evaporated milk||1⁄4 Cup (4 tbs)|
|Butter/Margarine||1 1⁄2 Cup (24 tbs)|
|Onion||1 , minced|
|Finely broken unsalted plain crackers||4 Cup (64 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Fine cracker crumbs||1⁄2 Cup (8 tbs)|
Drain corn liquid into saucepan and add enough evaporated milk to make 3 cups.
Heat liquid with 1 1/4 cups butter and onion.
Pour over broken crackers.
Add corn and seasonings and pour into greased shallow baking dishes.
Melt remaining 1/4 cup butter and mix with fine crumbs.
Sprinkle on mixture.
Bake in preheated moderate oven (375Â°F.) about 30 minutes.
