Country Corngakes

Ingredients
  Corn cut off the cob 1 Cup (16 tbs) (Fresh)
  Yellow cornmeal 1⁄2 Cup (8 tbs)
  Boiling water 1 Cup (16 tbs)
  Honey 2 Teaspoon
  Salt 1⁄4 Teaspoon
  Egg whites 2
  Vegetable cooking spray 1
Directions

Cook corn, covered, in boiling water to cover 8 to 10 minutes or until tender; drain corn, and set aside to cool.
Combine corn, cornmeal, and next 3 ingredients in a medium bowl; stir well.
Beat egg whites at high speed of an electric mixer until stiff peaks form.
Fold egg whites into corn mixture.
Pour 1/4 cup batter onto a hot griddle coated with cooking spray.
Cook 3 minutes on each side or until brown.
