Corn Flapjacks

Corn flapjacks is a fresh and crispy treat that is almost pancake like when cooked. Prepared with corn and egg batter, seasoned to taste, the corn flapjacks are griddle cooked and great as a breakfast that is filling and delicious.
Ingredients
  Fresh corn 1 1⁄2 Cup (24 tbs), cut
  Beaten egg yolk 2
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Light cream 2 Teaspoon
  Butter/Margarine 1 Teaspoon
  Fine cracker crumbs 2 Tablespoon
  Egg whites 2 , beaten
Directions

Blend together the corn, egg yolks, salt, pepper, cream, butter, and cracker crumbs.
Fold in stiff beaten egg whites.
Drop batter by tablespoons on hot greased griddle.
Brown flapjacks on each side.
