Gremolata is a condiment traditionally served with veal, it's also an excellent accompaniment for fish, seafood, chicken and game.
The ingredients you'll need for this recipe include a bunch of Italian flat-leaf parsley, a garlic clove and the zest of one lemon. Preparation is simple. Wash and spin the parsley so it's very dry. Remove the leaves and finely chop until you have about two tablespoons. Finely mince the garlic and remove about one teaspoon of lemon zest. Combine all the ingredients in a bowl and set aside for the flavours to mingle. You can also pound the ingredients together with a mortar and pestle or just use the back of a spoon or the bottom of a glass.
